Apaixonado por pessoas e por inovação, Barros se juntou a mais dois sócios e criaram a Boali, com o objetivo de universalizar o acesso à alimentação saudável e propagar o conceito de transformar hábitos e fazer o bem através da comida. A rede nasceu da estrutura da norte-americana Salad Creations, pioneira em implementar uma pista de ingredientes para composição de saladas.
Em 2016, houve a transição para o nome Boali, redução e junção das palavras boa alimentação, e com isso, a reorganização do cardápio, que deixou de servir apenas saladas e agregou pratos quentes, crepes, wraps, bowls com quinoa, macarrão integral, grelhados, falafel, além de chás, sucos naturais e sobremesas.
A adoção de um nome mais brasileiro e a incrementação do cardápio de acordo com o gosto do público ajudaram na expansão da rede. Hoje, tem mais de 30 unidades operando em São Paulo, Rio de Janeiro, Goiás, Brasília, Bahia, Alagoas, Pernambuco e Ceará, com pretensões de terminar 2019 com 42 lojas e chegar a 80 até 2020.
A Boali vem se organizando para adquirir redes menores do setor, o que facilitará sua entrada em regiões que ainda não atua e aprofundar sua presença no Centro-Oeste e no Nordeste brasileiro.

Para Rodrigo Barros, propagar a alimentação saudável através de franquias alimentícias é um modo de participar da transformação dos hábitos e disseminar bons exemplos sociais. A estratégia para expandir o conceito e o jeito Boali de se alimentar é levar a rede para todas as capitais. A empresa espera crescer 29% em 2018, 44% em 2020 e 59% em 2021, um crescimento gradativo, mas nada pretensioso para Barros, que acredita no nível de consciência do brasileiro por ter uma alimentação de mais qualidade. A empresa está em busca de investimento para concretizar as aquisições e expansões previstas para o próximo ano.
Pensando em ter uma franquia de comida saudável?
A Boali tem diferentes modelos para quem quer ser um franqueado. Os aportes iniciais podem variar entre R$ 60 mil a R$ 500 mil. A perspectiva de retorno do investimento depende do modelo de operação, mas já pode ser sentido entre os 12º e 18º meses. Depois que o franqueado decide ter uma loja da rede, leva em torno de 90 a 150 dias para a unidade começar a operar.
O processo envolve negociar um ponto de instalação, fazer uma obra de 45 dias em média e treinar os novos funcionários. O franqueado tem que passar uma semana na loja própria da Boali, em São Paulo, aprendendo sobre o negócio. Na semana seguinte, uma equipe de implantação vai até a unidade treinar os colaboradores antes das vendas começarem. Por fim, na primeira semana aberta ao público, uma consultoria de campo fica na loja acompanhando toda operação.
